Roasting the potatoes caramelizes the edges, giving them a bit of delectable crust. Use new potatoes (or another variety) if you have trouble finding fingerlings. By cooling the potatoes a bit before adding the feta, the cheese stays in pieces instead of melting.

Ingredients

  • 3 pounds fingerling potatoes, halved lengthwise
  • 1 head garlic, cloves separated and peeled
  • 7 tablespoons olive oil (divided)
  • 1/2 teaspoon salt (divided)
  • 1 1/2 teaspoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon black pepper
  • 20 kalamata olives, pitted and halved
  • 1 roasted red bell pepper (jarred is fine), cut into strips
  • 2 tablespoons chopped fresh oregano
  • 1/4 pound feta cheese, crumbled

Instructions

  • Heat the oven to 425°. Put the potatoes and garlic on a baking sheet or in a roasting pan and toss with 3 tablespoons of the oil and 1/4 teaspoon salt. Cook, stirring once, until tender, 25 to 35 minutes.
  • Meanwhile, in a small bowl, make a vinaigrette by whisking together the lemon zest, lemon juice, black pepper, and the remaining 1/4 teaspoon salt and 4 tablespoons olive oil.
  • When the potatoes are tender, put them in a large bowl and toss with the vinaigrette, olives, red bell pepper and oregano. After the potato salad has cooled slightly, add the feta and gently combine. Serve at room temperature. If made ahead of time, refrigerate, then bring back to room temperature before serving.

    I couldn’t decide what to make with the pork chops I have set out for dinner tomorrow night, now I know! I think I will toss it with them potatoes still hot, will make it more “creamy”

    Do you leave the garlic cloves whole and toss them in with the other ingredients along with the potatoes?

      Yep, just leave the garlic whole. You’ll have mellow nice roasted garlic cloves in the final dish.
